tonight i’ve been making the classical serbian dishes sarma and gibanica. i love the almost handicrafty way you fold the sauerkraut, layer the filos and brush the cheese in between each chiffon-like coating. then the milk soaking, the smell when it’s in the oven.. the whole procedure is very meditative and relaxing.
